Usually, my candy eating/couch laying is accompanied by a nice, long scroll through the pages of Pinterest. And it is there where I found a recipe for Organic Gummy Bears with the nutritional information as follows:
20 Gummy Bears
14 Calories
0g Fat
4g Sodium
38g Potassium
2g Carbs
.05g Fiber
1.5g Sugar
2g protein
And I was like..what.
So I made them. And they were pretty damn good.
*Dice up two cups of organic strawberries
*Squeeze as much juice from your orange as possible. Should equal about 1/2 cup. It took me 1 1/2 oranges.
*Measure out 1/4 cup of lemon juice, and 1/4 cup lime juice.
*Combine lemon juice, lime juice and orange juice and strawberries in a pot. If you do not want to waste the orange, add the remainder (pulp) into the juice.
*Let the mixture simmer on medium until the fruit is extra soft.
*Remove mixture from stove and add to a blender or food processor.
*Add 1 packet of Stevia in the Raw.
*Blend until smooth and let the mixture cool down a bit. I let mine cool in the blender for 10 minutes.
*After the mixture has slightly cooled, add 5 packets of gelatin.
Then I added a few drops of vanilla stevia because I felt like it and I don't follow rules.
*Blend again until there are no clumps.
*Add the mixture to a flat baking sheet. I used a cookie sheet. The thickness of your pan should depend on how thick you like your candy to be.
*Throw it in the fridge for 1 hour to firm.
*While mine were in the fridge, I made a cute little "cookie cutter" out of foil. The original recipe said she found her bear cookie cutter at Hobby Lobby but I was like:
So this is mine.
*After your mixture had cooled and firmed, remove it from the refrigerator.
*Test your patience then by cutting them all out. And then enjoy.
*Disclaimer* They're no Sour Patch Kids. But yes, delicious nonetheless.
